Desperate to make use of all the wonderful apples that are filling the markets everywhere at this time of year, another apple cake caught my eye. This time it was from Maria Elia's stunning new book 'Smashing Plates'. If you haven't bought it yet, add it to the Christmas list now.
Made with Greek Yoghurt it is moist and yet delicate, with a slight sharpness of flavour which is balanced by the beautifully sweet brandy syrup, coating the walnuts and dissolving through the cake.
With a dollop of greek yoghurt and a cup of black tea, I can't resist going back for seconds.
